TWO healthy potato recipes

Hello there ! Miss me ? 🙂 it’s been a while, I know. I am back today with two of my go-to healthy recipes.

I started taking care of my health and my body, and I must say, it’s very doable. Unlike what society tells us ! I don’t have to restrict myself, or eat nasty-looking-and-tasting weird diet recipes. These two recipes are good, especially if you use olive oil in the, and a million times better if you fry them. But I have been staying off all oils for a while to see how it goes.

Potato balls with chickpeas and aquafaba

First off, if you are not familiar with the term “aquafaba”, then you need to know that this stuff is MAGIC ! It’s the cooking water of the beans that you cook yourself, or the water for a can of beans. Usually the bean water from chickpeas is flavorless and is perfect for any sweet or savory dish. When you beat it it acts EXACTLY like egg whites. And here’s my proof :

You will need :

  • Potatoes (boiled and puréed)
  • Boiled peas (or canned)
  • Chickpeas (boiled or canned) – keep the aquafaba
  • Curry paste (or hot sauce if you prefer)
  • Salt and pepper to taste
  • Olive oil (optional)

Beat the aquafaba to soft peaks (about 10 minutes in a stand mixer). Purée the boiled potatoes and the chickpeas. You may want to add a couple of spoons of olive oil but it’s optional. Mix everything together and form balls or patties.

Bake for 20 minutes or fry in hot vegetable oil. I have to admit that frying them takes them to a whole new level of tastiness !

Sour potato balls with capres

You will need :

  • Boiled and puréed potatoes
  • Puréed chickpeas
  • Boiled peas
  • Canned corn
  • Capers
  • Onion
  • White vinegar
  • Salt and pepper to taste

Chop up the onion and let it sit in white vinegar while you prepare everything else.

Purée the boiled potatoes and the chickpeas. Mix them with the peas, corn, onion and add 2 tbsp of the vinegar. Form balls or patties. Sometimes I like to make patties and eat them with a burger bun and some ketchup, yum so good !

Bake for 20 minutes or fry in hot vegetable oil.
